Goals of this workshop:

  1. Learn the difference between Processed Food Registration and Cannery licenses, who needs them, and how to go about obtaining them.
  2. Determine if your current or future Value Added Product business will fall under the Preventive Controls Rule.
  3. Hear about a local Value Added Product business that’s recently gone through the regulatory process.
  4. Leave with a suite of resources (paper, electronic, person contact information) to use in your VAP business.

Presenters include:

Erin DiCaprio, PhD, Asst Specialist in Cooperative Extension Food Safety & Technology at UC Davis.

Kali Feiereisel, MPH, Food Safety Specialist for CAFF.

Definitions:

  • Value Added Product -taking the raw product and transforming it into another product. Examples include taking milk and making cheese or ice cream, taking fruit and making pies or jams, taking wool and making blankets.
  • FSMA - the FDA Food Safety Modernization Act was signed into law in 2011. FSMA "aims to ensure the U.S. food supply is safe by shifting the focus of federal regulators from responding to contamination to preventing it." from FDA.
  • PFR - Processed Food Registration (and Cannery License) are regulated by CA Dept of Public Health and obtained by all value add production operations (with the exception of items made predominantly with dairy products (CDFA) or meat products (USDA/CDFA).
